In what has been an incredibly interesting year, we have seen several new recipes be embraced by our readers. However, some of our tried and true dishes continue to be favorites of many. We know…who has leftover mashed potatoes?? We can’t believe our granny – mother of 8 children on a dairy farm – ever had any either but she must have because this recipe came straight from her. These potato pancakes are crunchy on the outside with a creamy middle.
