Tips for the roasted green beans and potatoes recipe

  • We blanch potatoes and fresh green beans to make them more tender when roasting. It is also a great way to prep the roasted potatoes and green beans ahead of time. Blanch the veggies then store in the refrigerator and pop in the oven when you’re ready to serve.
  • We recommend you use fairly high heat when roasting potatoes and green beans so they can brown and get that nice golden color.
  • We find that parmesan is already salty, so go easy on salt at first, then taste and adjust seasoning to your taste.

What type of potatoes should we use for roasting?

We used baby red potatoesin this recipe. They’re easy to find, and they work great. We think it’s best to use firmer, waxy potato, as those typically will hold their shape best during roasting and not turn into mashed potatoes in the end.

How to keep the roasted potatoes leftovers and green beans?

You can keep the roasted green beans and potatoes for up to 3 days in an airtight container in the refrigerator. Reheat in the microwave or in the oven.

FAQs

Why are my roasted green beans tough? ›

If your green beans are tough after roasting it most likely means one of two things. Either the green beans you used were a bit too mature and tough (this method is best with slender green beans, especially haricots verts, or French green beans) or you didn't cook them long enough.

When not to cook green beans? ›

You can tell the freshness of green beans by texture and color. If they are still crisp, and “snap” when you break them in two, they are good. If they turn mushy and stringy, they are going bad. And, obviously green beans should be green!

Can you eat beans and potatoes together? ›

Green Beans and Potatoes are an easy side dish perfect for so many dinners! These would also be great for Thanksgiving if you aren't a fan of green bean casserole. For this recipe you can use fresh, frozen, or canned green beans. My family prefers canned, so that's what we usually use with this recipe.

Why do you break the ends off of green beans? ›

Cooks snap off the end of green beans so that they can cook evenly and be more tender. Unless the green beans are already tender, then you don't have to worry about snapping the end off because the end only needs snapped off to help develop the beans on the inside of the green bean.

How do you cook green beans so they are not tough? ›

Fill a medium saucepan two-thirds full with water, add a tablespoon of kosher salt and bring to a boil over high heat. When the water reaches a rolling boil, add the green beans and stir gently until the water returns to a boil. Cook until just tender but not mushy, about 4 to 4 ½ minutes.

Does cooking beans longer make them softer? ›

Add 1 to 4 tablespoons of vegetable oil and up to 1 tablespoon of salt to 1 pound of beans. Seal pressure cooker and cook according to the manufacturer's instructions. Adjust cooking times as needed depending on the variety. Cooking longer will result in softer beans.

Are green beans and potatoes healthy? ›

Potatoes are a rich source of vitamin C, potassium, and a number of other vitamins. Beans are a rich source of most B vitamins and protein. Both are good sources of fiber.

When not to use potatoes? ›

The Bottom Line. You are better off tossing potatoes that have turned green or grown sprouts. Eating them puts you at risk for toxicity from solanine and chaconine, 2 natural toxins found in green or sprouted potatoes.

Are potatoes and green beans compatible? ›

Legumes. From sugar snap peas to green beans, legumes are a great choice to grow with potato plants because they provide much-needed nitrogen in the soil. In addition, potato plants deter the Mexican bean beetle, a pest of many legumes.

What is the white stuff in the bottom of canned green beans? ›

White sediment on bottom of jars Starch from food settling out. Mineral precipitates. Bacterial spoilage. Use soft water.

Why do French cut green beans taste better? ›

"Because they are cut so thinly, they absorb more flavor as they are cooked or baked," Gideon says. "In most cases, you are not looking for al dente or undercooked beans. They are typically baked with many ingredients, achieving a wonderful flavor with a finish of crunch on top." Like French's French fried onions?

Are you supposed to snap both ends of green beans? ›

The only part of the bean that always needs to be removed is the tip of the stem end (this is sometimes called "topping" the bean), where the pod was once attached to the rest of the plant. There is no practical need to remove the tail end of a green bean—the choice to do so is aesthetic.

Why are my green beans hard after cooking? ›

On a cooking note, regarding tough green beans, you may be undercooking them.

How do you keep green beans from being rubbery? ›

Steamed green beans can become rubbery if they are overcooked. To avoid this, make sure to steam them just until they are tender-crisp and still bright green (3-4 minutes).

Why are my baked beans tough? ›

Dried beans typically have a moisture content of around 16%. However, as they age, moisture evaporates, giving pectin time to age and harden the skin. These beans can often take much longer to soften while soaking and cooking, up to twice the time!
