This past weekend I was making some Buffalo chicken egg rolls with cilantro lime ranch sauce. It was a Saturday and Gerald was off work and the whole family was waiting on lunch, LOL. If you don’t know anything about blogging is that it takes a lot of time and taking pictures is involved. “Low Carb Recipe with Chicken: Keto Street Tacos”

So, I had baked some chicken breasts and had a lot of meal ideas going on in my head (which is normal for me, lol). And, that is when this recipe came to mind!

I took some baked chicken that I had seasoned with the ingredients that you’ll see on down in this post. But, I took that chicken at made egg rolls with some of it.

I had some extra seasoned chicken breast and I had purchased some of these Mission Zero Net Carbs tortillas for a different recipe. While everyone was gobbling down my Buffalo Chicken egg rolls I came up with this recipe and IT IS DELICIOUS! Actually, Gerald, who isn’t really on anything keto, took one of these tacos and added some Mexican Street Corn to his tacos.

I know corn isn’t keto, but it was really good. I had made the Mexican street corn to go with the egg rolls, because my kiddos LOVE my Mexican street corn. My first thought was buffalo chicken and Mexican street corn don’t go together, but my kids thought that it was great! LOL

Can I eat street tacos on Keto? Are street tacos keto-friendly?

YES, today there are so many options at your local grocery store. I have tried many brands of low carb tortillas or keto tortillas and some I have liked and some I have not bought again, lol. But, yes you can eat street tacos on the keto diet if you buy low carb tortillas.

Are street tacos high in carbs? Well, this depends on what kind of tortillas that you are making your street tacos with. Corn tortillas are not keto-friendly at all, but there are keto tortillas that are small street taco size that will definitely work on the ketogenic diet.

How many carbs in a street taco? If you choose zero net carb tortillas then the answer is zero. However, I have purchased low carb tortillas at my local supermarket (Aldi) and they have 4 net carbs per tortilla. So, just check out your local supermarket and read the packages to find the best keto tortillas for you.

Are corn tortillas OK on keto? No, corn tortillas have too many carbohydrates. The only option for those on a keto diet are to make your street tacos with low carb tortillas.

Of course, it can be eaten plain, but I love to add lime juice and cilantro to my cauliflower rice. Creole seasoning is also delicious on cauliflower rice. To make a Spanish cauliflower rice add some taco seasoning to it.

I like to purchase the cauliflower rice in my freezer section of the local grocery store. It is so versatile and can be seasoned with almost anything!

Can I eat rice on a keto diet? No, regular white rice or brown rice is not keto-friendly. The best keto rice substitute is cauliflower rice, it basically doesn’t have any flavor and can be flavored with taco seasonings to taste like Spanish rice.

What can I replace rice with? Take some cauliflower rice from your freezer section at your local supermarket and make a creamy sauce from a couple of simple ingredients of heavy cream and garlic powder. Mix these two ingredients in a small bowl and pour this mixture over your rice and stir, garnish with a little cilantro, YUMMY!

To add some protein to the above creamy garlic cauliflower rice, drain a can of chicken breast (cooked) and add to your rice. It is optional to cook the can of chicken, but you can cook the chicken in a large skillet with a little olive oil over medium heat until warm.

This is a great meal option for those busy weeknights: a bag of cauliflower rice, 1 can of drained chicken breast and any of your favorite seasonings. You can also add a cup of shredded cheese and chopped green onions.

What is a keto taco made of? Keto tacos are a great low-carb meal that can be made with shredded chicken breast that has been cooked in an Instant Pot, slow cooker or on the stove top OR the easiest is a drain can of cooked chicken breast! Also, browned ground beef is delicious on low carb tacos. Shredded beef or shrimp will also work for tacos on the keto diet.

My favorite keto tacos are fried keto torillas and LOTS of shredded cheese, all melty! 2 simple ingredients, LOL!

What kind of meat is keto? All meats are keto friendly as long as they have no added sugar in the ingredients. Keto meats include chicken, beef, shrimp, pork, sausage, bacon, ham, or turkey. Beef jerky with no added sugars, deli meats with no added sugars also.

Can I eat leftover keto street tacos the next day? Yes, just place your leftovers into an airtight container or place a sheet of aluminum foil over a casserole dish. The leftovers will stay good in the refrigerator for up to 3 days and up to 3 months in the freezer. To thaw, simply set out on the counter until they reach room temperature and reheat in the microwave.

How can I make tacos without tortillas? A great way to make tacos without tortillas is to make lettuce wraps. Simply, take all of your taco ingredients and add them to a large lettuce leaf and enjoy. Any type of green leafy lettuce will work.

What is good with lettuce wraps?My favorite lettuce wrap is seasoned taco meat, lettuce, tomatoes, avocados, cheese and salsa. But, you can add creamy garlic chicken and parmesan cheese to lettuce wraps too. There are so many healthy eating options for lettuce wraps. Another option is to add chicken tenders, marinara sauce and parmesan cheese! Yummy!

Step 1 – The first step for this easy low carb chicken recipe, is to cook the chicken breasts and shred it. You can cook your chicken breasts in many different ways. I love to bake or grill my chicken breasts, then after it has cooled I will shred the chicken with my hands. Either baking or grilling is an easy way to cook your chicken breast. If it’s a nice day outside I’ll grill mine, but if it’s not then I’ll bake my chicken in the oven at 350 degrees until the internal temperature is 165 degree f using a meat thermometer.

  • Cook chicken on the stovetop in large skillet or a cast iron skillet (I love cooking in cast iron skillets!)
  • Cook chicken in a crock pot or slow cooker
  • Cook chicken in an Instant Pot
  • Buy a Rotisserie chicken from the supermarket

Step 2 – Prepare Buffalo Chicken

  • Add shredded chicken breast to a bowl and add sour cream, buffalo sauce, green onions (optional), dill weed, garlic powder and salt.

Step 3 – Make the Cilantro Lime Ranch dressing

  • Take a medium size bowl
  • Add sour cream, mayo, garlic powder, chili powder, salt, lime juice and cilantro
  • Mix well and set aside

Step 4 – Take your Mission zero net carbs tortilla and add the shredded chicken breast, cilantro lime ranch dressing and cheese. I chose a queso fresco cheese from Aldi that I crumbled on top of my street taco, plus I added some pico de gallo (optional)

TIPS!

  • Add the cilantro lime ranch to your tacos or use it as a dipping sauce
  • Before preparing the tacos you can microwave your tortillas or not. I didn’t cook mine and they were delicious. The tortillas could be heated up in a microwave or fried in a skillet with a little oil.
  • Leave off the buffalo sauce and add taco seasonings or taco sauce
  • Choose a different cheese
  • Leave out the pico de gallo

Buffalo Chicken Ingredients

  • 1 lb or 2 big cooked chicken breasts
  • 1/3 cup sour cream
  • 1/4 cup buffalo sauce
  • 3 stalks green onions
  • 1 tsp dill weed
  • 1 tsp garlic powder
  • 1 tsp salt

Cilantro Lime Ranch

  • 2 Tbsp sour cream
  • 2 Tbsp mayo
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • 1 lime juiced
  • 1/4 cup cilantro (chopped)

Toppings

  • 1/4 of a package of Cotija cheese or queso fresco cheese (crumbled on top of tacos)

Tortillas

  • 1 package of Missions Zero Net Carb tortillas (14 tortillas)

Instructions
