    Preheat griddle

    Preheat your griddle or non stick skillet over low heat.

    Blend it

    Add all ingredients in a blender. Blend until smooth.

    Pour into griddle

    Pour pancake batter onto a preheated griddle or skillet. Make pancakes no larger than 3 inches wide. Larger pancakes are harder to flip. Let cook on low heat for several minutes (3-5 minutes) or until you can easily side a spatula under the pancake to flip. When ready, flip the pancakes and cook a few minutes on the other side. Remove from skillet.

    Coconut flour pancakes

    This keto pancake recipe is made with a balance of eggs and coconut flour. Coconut flour is preferred over almond flour as it gives the pancakes a golden brown color, which resembles traditional pancakes more!

    Plus almond flour tends to burn easily. By the time your almond flour pancakes are done cooking they have a dark brown, burnt appearance.

    If you don’t like the taste of coconut flour or think the pancakes will have an eggy taste, not to worry as these flavors will be masked by the cream cheese and also by the cocoa powder.

    Is cream cheese keto friendly?

    Cream Cheese is keto and is actually recommended to have on a low carb diet. Cream cheese can be used in various recipes and it helps to hit your fat macro goals, whilst also keeping within your protein target. It is a favorite amongst many people following a keto diet as with less than 1g of carbs per serving. It only adds fat to a meal, thus cream cheese is a great addition to any meal or snack where you need to add more fat.

    This always depends on the brands you choose, so when picking out cream cheese, it would be wise to have a look at the nutrition label before purchasing. Don’t get flavored cream cheeses. Just stick to plain cream cheese with minimal fillers.

    On a keto diet, cream cheese can be used as a thickener for sauces, mixed with heavy creams and herbs to create a dip and even to add more fat on top of meats.

    Best pancake size

    Since keto chocolate pancakes do not contain gluten which is typically what helps to hold traditional pancakes together, it is recommended to make your pancakes no larger than three inches. Any larger and your gluten-free pancakes will be hard to flip.

    Keto pancakes are a bit more fragile, so the smaller they are, the less difficult it is to keep the batter together whilst flipping them over.

    If you would prefer to have bigger pancakes, add in 1/2 teaspoon of xanthan gum, as this could help them bind better, and thus, makes them easier to flip.

    Griddle vs non-stick skillet

    A griddle is recommended for cooking cream cheese keto pancakes as pancakes are delicate and a griddle can produce more consistent heat which can help the pancakes cook more evenly.

    If a griddle is not available, a non-stick skillet can still be used. Preferably the non stick skillet should be of good quality and have a heavier bottom as it will distribute the heat more evenly than a thin pan would.

    However, make sure that the skillet is preheated and that the burner is set to low or low medium. The first side of the pancakes should be cooked longer on low heat so that the pancake batter has time to set around the edges, making it easier to then flip. It would also be better to cover the pan when frying, as this also helps make it easier to flip the pancakes.

    Best cocoa powder for keto

    For this recipe to be keto friendly, one must use 100% unsweetened cocoa powder as it doesn’t contain sugar. If it doesn’t say 100% cocoa powder, it probably contains additional fillers and sugar that may contain carbohydrates.

    Look for a cocoa powder that contains 2 g net carbs or less per serving. Sugar free cocoa powder is great for adding chocolate flavor to keto friendly desserts and other sweet keto recipes.

    Mixing cream cheese pancake batter

    These delicious pancakes can be made with a blender, which is such a game changer! Blenders are easy to use and can be quickly washed up afterwards.

    It is recommended to use a blender to cut up all of the cream cheese. A food processor or a hand mixer can work as well.

    My favorite blender is by BlendTec. It blends this keto chocolate pancake batter super smooth. Other high powered blenders that are recommended are the Vitamix and Ninja.

    Toppings for pancakes

    Some toppings which can be use to enhance the flavors of these low carb chocolate pancakes are sugar free syrup, yogurt, whipped cream or even berries!

    2. These are delicious and easy to make. I do have trouble flipping them. They don’t seem to hold together very well. And if I try to let them cook longer to try to help with holding together, they start to burn. What could help them cook up firmer so I can flip? Otherwise, this is a fabulously delicious pancake!!

      1. Low heat and a griddle works best. As soon as you slide a spatula underneath and tug it to slide them, they are ready to flip.

    4. These are great. I cook mine in the oven so i don’t have to deal with flipping. 350 degrees for 12 minutes. Perfection!
