It’s the time of year….fresh veggies from the garden! It’s also that time of year where you have a plethora of zucchini and squash and need a recipe to use them up before your inundated on your counter with them. This recipe forCrock-Pot Fresh Zucchini Casserole is super easy to make if your needing such a recipe!
This casserole is filled with yummy vegetables, a creamy sauce and then topped with a crispy crust made from stuffing mix (like Stove Top Savory Herb) and it is just delicious. You can serve this as as side dish or as a meatless main dish.
You can use all zucchini squash or yellow summer squash or…a combination of the two.
And while zucchini is an abundant vegetable in most summer vegetable gardens they are also pretty easy to find year-round in most grocery stores.

What Can I Substitute The Bread Crumbs With If I Am Gluten Free?
If you are looking to replace the bread crumbs in this recipe with something that is gluten free there are several options available. First, there are gluten free bread crumbs available to purchase (or you can make your own by using the heals or stale gluten free bread). Alternatively we have had great success using panko bread crumbs, ground up Parmesan cheese crisps as well as ground up pork rinds. As with anything when you cooking gluten free check your labels to make sure they don’t contain gluten.
Can I Use Other Vegetables In This Recipe?
You can easily substitute other summer squash (such as yellow squash) in this recipe for the zucchini.
Can I Use Something Other Than Cream Of Celery Soup?
If you are not a fan of cream of celery soup you can also use cream of chicken soup or cream of mushroom soup in this recipe. If you are on a gluten free diet there are “cream of” soups available on the market that are gluten free. You just need to look for them.
You can also use this recipe for Cream Of Anything Soup Mix which can be used in any recipe that calls for canned cream of type soups.

When you have an abundance of fresh zucchini from your Summer garden make up this tasty side dish casserole recipe. With a creamy sauce and a crunchy topping this vegetable side is sure to be a hit with the entire family!
Add the zucchini, onion, carrots and canned soup to a large mixing bowl and set aside.
Stir together the sour cream and the flour in a small mixing bowl and add it to the vegetables, tossing to coat.
In another mixing bowl toss the melted butter with the stuffing mix.
Evenly spread half of the stuffing mix in to the bottom of a 5 quart or larger slow cooker (or a 3.5 quart casserole slow cooker).
Add the sauce coated vegetables evenly on top of the stuffing.
Evenly spread the remaining stuffing mixture over the top of the vegetables.
Cover and cook on LOW for 7 hours.

A slurry is a mixture of flour and water, whisked together until smooth and added towards the end of cooking; it's a super-simple way to thicken any soup. For slow cooker soups, add your slurry with at least 30 minutes of cook time left so that the raw flour can cook and thicken the soup. Need a gluten-free option?
Salting and sautéing the squash before baking helps to remove excess moisture and prevents the casserole from becoming watery. Cream cheese and sour cream lend the filling richness and tang.
I wanted to ask if it would be OK to put a small casserole dish with the ingredients into the slow cooker, and then switch it on? Editor: The short answer is yes. As long as the dish is oven-safe, it can go into your slow cooker.
okay, secondly, you can put a tea towel under the lid. that will capture some of the moisture, it stops it circulating in the slow cooker. and then thirdly, you can use a corn flour slurry, so into a bowl, a little bit of corn flour, cold water, mix it with your finger, pour it in, stir it. you're done.
Place the cooker on a high setting, and open the lid for 30-45 minutes to let excess moisture cook off. The liquid will reduce, leaving you with a thick and delicious gravy or sauce. (Tip: This trick can also be applied for thickening stews, or when you've accidentally added too much liquid.)
Slice and salt zucchini in advance of cooking to draw out some of the vegetable's excess moisture (while also seasoning it more thoroughly). To do this, cut up a pound of zucchini and toss it with ½ teaspoon of table salt. Let it drain in a colander for about 30 minutes before patting it dry and cooking it.
You only need a little salt — half a teaspoon of kosher salt for one medium zucchini, say — to start pulling the water out. Use more, and the zucchini will simply taste like zucchini-flavored salt.
In separate medium size skillet, sauté the sliced onion in butter for 5 minutes. Remove from pan and, using a large bowl, add squash, onions, sour cream, Paula Deen's House Seasoning and sharp cheddar cheese. Pour mixture into a buttered casserole dish and top with cracker crumbs. Bake for 25 to 30 minutes.
Most appliances will automatically shut off after 20 or so hours on this setting, but you shouldn't leave food in a slow cooker for an extended length of time. The general rule of thumb is that 2-4 hours is the maximum length of time you can leave food in a slow cooker on warm.
Stop Stirring Your Stew — And Start Layering Your Ingredients. To make beef stew in a slow cooker, it's important to not do one thing — and start doing another. First of all, don't stir your stew! Once you get the ingredients into the slow cooker, set it and forget it — seriously!
This moist environment allows you to leave food to cook for hours without risking it drying out. But because there is no evaporation, the liquid isn't able to reduce and thicken naturally in a slow cooker, often resulting in watery sauces and loose gravies.
You DO NOT have to put water in your crockpot in order to use the liners, HOWEVER, it is HELPFUL if you are cooking certain foods for a long period of time(like set- up in the morning, then return after work) such as rice for instance, putting some water at the bottom of the slow cooker and the liner prevents the food ...
5. Reduce liquid when using a slow cooker. Because your slow cooker will have a tightly sealed lid, the liquid won't evaporate so if you're adapting a standard recipe, it's best to reduce the liquid by roughly a third. It should just cover the meat and vegetables.
A cornstarch slurry is a mixture of a cold liquid with cornstarch. It is used as a thickening agent, and is particularly common in Asian sauces. As a rule of thumb, dissolve 2 parts cold water and 1 part cornstarch.Add the slurry to your sauce as it simmers in the slow cooker.
Make sure you mix a solution of cornstarch and water cold, and then add it to your hot dish. Same can be said for flour. A flour and water paste (desk or wasteland spoon of flour then upload cold water until it is a liquid paste) delivered to the casserole will thicken it.
It will still be pretty thin when it is done cooking, it gets thick while cooling. Gently remove the inner pot from the slow cooker, trying not to allow too much movement of the cream or the liquid part will break through and you will get less clotted cream.
Serve with or over meat and/or vegetables. You can also add cornstarch dissolved in water (1 or 2 tablespoons cornstarch to 2 or 3 tablespoons cold water, depending on how much liquid you have) directly to the slow cooker near the end of cooking to thicken the liquids.
